Red Beet Burrata

Ingredients

enough for 2 portions

Red Beet

  • 500g cooked red beet, cut into bite-sized pieces
  • 2 garlic cloves, peeled, crushed
  • 1 tbsp thyme
  • 2 tbsp olive oil
  • 1/2 tsp salt

Toppings

  • 1 burrata, cut in half
  • A good drizzle of olive oil
  • A good drizzle of aceto balsamico di modena oro or crema di balsamico
  • salt
  • pepper
Red Beet with Burrata

Method

  1. Preheat the oven to 200° Celsius.
  2. Combine all Red Beet ingedients in an oven-proof dish, and cover with tinfoil.
  3. Bake for 20 minutes, and remove it from the oven.
  4. Distribute the Red Beet on two plates.
  5. Arrange one half of the burrata on each plate, and add the rest of the Toppings.
