Chickpea Curry

Ingredients

enough for 4 portions

  • 2 tbsp vegetable oil

Onion mix

  • 1 onion, chopped small
  • 3 cloves garlic, minced
  • 1 hot red chilli, chopped fine
  • thumb-sized piece of ginger, minced

Spice mix

  • 1 tsp sea salt
  • 1 tsp ground turmeric
  • 1 tsp mustard seeds
  • 1 tsp ground coriander
  • 1 tsp ground cumin
  • 4 curry leaves
  • 1 tsp ground fenugreek

Other

  • 2 tbs tomato puree
  • 2 cans chickpeas, drained
  • 250ml coconut milk, creamy
Chickpea Curry

Method

  1. Prepare your favorite rice (e.g. in a rice cooker), so it is ready when the curry is done.
  2. Over medium heat, place a large saucepan and add the oil. As soon as the pan is hot, add the Onion mix. Stir frequently, and add a splash of water in case the mix browns too much on the surface of the pan. Keep in mind, that this is the most important part of making the curry. Continue stirring until golden brown, about 10 minutes.
  3. Add the Spice mix to the pan, and stir for another 3 minutes to let the spices roast, and release their aromatics.
  4. Add the tomato puree, and cook for 1 more minute.
  5. Add the chickpeas. Stir everthing well.
  6. Deglaze the pan with the coconut milk, and stir well. Then, allow the curry to come to a simmer.
  7. Simmer the curry on low heat for around 10 minutes.
